Eating healthy can be hard especially when you feel like you are always having the same thing. So here are some more healthy recipes you can try this week. These recipes were contributed by Lori Willis, from the NuCara Home Office in Conrad, Iowa.
Greek Yogurt Dip for Veggies
– Non Fat Yogurt Dip
– Favorite Dip Mix (Ranch, Dill, Spinach)
Mix together and serve.
Chocolate Peanut Banana Ice Cream
– One Frozen Banana
– 1 tbsp of PB2 (dehydrated peanut butter)
– 1 tbsp of Coca Powder
Variations of this are endless. Honey, Cinnamon, Berries. If you want it like a shake add Unsweetened Almond Milk.
Blend all ingredients together and serve.
Southwest BBQ Chicken Salad
– Chicken breast cooked with BBQ Spices
– Can of Mexi Corn
– Can of Black Beans
– BBQ Spices
– Light Ranch
– BBQ Sauce
Grill chicken with BBQ Spices or pan fry. In another pan, spray it with no-stick spray and warm up the Mexi-Corn, Black Beans and BBQ Spices (spice to your liking). Mix 1/2 Light Ranch and ½ BBQ Sauce to make the dressing. Top the lettuce with Mexi- Corn, Black Beans, chicken and dressing. Serve warm.
